Poached Pears in Red Wine and Juniper

Serves: 4-6
Ingredients
  • 3 cups red wine
  • 1 cup caster sugar
  • 4-6 beurre bosc pears, peeled, halved and cored
  • 1 cinnamon quill
  • 1 star anise
  • 4 cardamom pods, bruised
  • 10-15 juniper berries
  • greek or any other plain yoghurt for serving
Instructions
  1. In a heavy based pot, combine the red wine, sugar and spices
  2. Heat the wine and simmer until sugar has dissolved
  3. Turn the heat down to low, place a lid on the pot and simmer for about 45 min to 1 hour
  4. When done, a knife should slide through the pear with no effort.
  5. Serve warm or cold with syrup and yoghurt
