Honey and Cardamom Madeleines

Ingredients
  • ¾ cup plain flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cardamom
  • 75g melted butter
  • ⅓ cup caster sugar
  • 2 tablespoons honey
  • 2 large free range eggs
  • 1 teaspoon vanilla
  • 1 large teaspoon of orange zest (I used a whole small mandarin)
Instructions
  1. Begin the mixture at least 4 hours in advance, keep chilled in the fridge.
  2. To bake, preheat the oven to 160 degree celcius.
  3. Brush a Madeleine pan with softened butter
  4. In a small bowl, sift the flour, baking powder and cardamom
  5. In a mixer, beat eggs, mandarin zest, sugar and vanilla until light and fluffy.
  6. Fold in the dry ingredients and melted butter until thick and smooth.
  7. Cover and refrigerate.
  8. Place 1 tablespoon in each mould and each mould should look like it needs more but it doesn't!
  9. Bake for about 7 or 8 minutes until lightly golden.
