Artichoke Crostini
- 400g drained artichoke hearts, in brine
- 1 cup pitted or sliced green olives, in brine
- 1 tablespoon capers
- 1 garlic clove, crushed
- ¼ cup extra virgin olive oil
- 1 crusty loaf of bread
- Place all ingredients apart from the bread into the food processor. Add a little extra oil if necessary.
- Slice the bread and brush with a little oil and toast.
- Top with artichoke mix and enjoy!
